When I had GD with the twins and was on hospital bed rest, one of my favorite nurses brought me some sugar-free Russel Stover candies for Easter. They were AMAZING! I would eat (savor) one pecan delight for snack every afternoon, and it totally made my day...yeah, I had no life lol. Anyway, I'm not positive if this works with the diet, but one dessert-ish recipe that I make for the twins is soft tofu blended with fruit (and sometimes fruit juice for added sweetness). You just freeze it and eat it like ice cream.
